The Hunt to Feed Banquet, was a great SUCCESS! We netted over $4,000 which will go towards
the processing costs of venison to the current state certified butchers within the program and
towards the costs of becoming a non-profit 501c3 organization.
It was an overwhelming, SOLD out crowd of over 200 people.

continue to publicly educate people about their efforts to reduce deer densities, the reception to
hunting, more specifically "archery hunting", is becoming more accepted by private home owners."

Here are a few quick tips for gaining access to private land in Fairfield County:
1. First - Do your research. Pull out town maps and locate properties that border large tracts of
land. This is more than likely where the deer bed in between feasting on private property owner's
hostas and arborvitaes.
2. Be Presentable. Prior to knocking on someone's door to ask for permission, prepare yourself as
if you are going to Sunday Mass. No cutoff sleeves, dirty old jeans etc. Dress to impress.
3. Be Polite. Explain to the homeowner that you have been reading in the newspapers about the
deer over-population and reported lyme disease incidents and that you are a bowhunter that is
interested in assisting. Explain what you do with the venison and offer to share in the bounty. If
you participate in the Hunt To Feed program then explain how the venison goes to the CT Food
Bank.
4. Bring a child. Most people have a difficult time saying the words "No" to a child - unless their
doing something wrong of course, but this shows compassion and that you are not only a
responsible hunter, but a person just like them. Children are the future of our sport and as the ways
of hunting change, we must evolve with them.
5. No time to knock on doors? Then sign up for Find A Hunter.com This is an internet program
that we've started for landowners looking for a hunter. Most Fairfield County homeowners work
behind a computer and again as the general public is becoming more informed of the necessity to
use hunters as a management tool, the more likely these homeowners will start to seek out hunters
and available hunters through the internet. Find A Hunter.com does just that!

Nancy Carrington, Executive Director of the CT Food Bank
and Kate Walton, Programs Director were in attendance to
show their support. Carrington addressed the crowd by
providing a status of the Food Bank and how the efforts of
all participants in the Hunt To Feed Program over the past 2
seasons has provided over 7,868 meal portions of much
needed lean and nutritious protein.
Also present was Russell Cornelius, representative of the
Fairfield County Deer Alliance and member of the
Brookfield Lyme Disease Task Force. Russell spoke to
some of the dramatic affects of deer over population and
how programs such as Hunt To Feed are a win – win
situation for not only the state, but for towns people who
also enjoy the outdoors, but are generally afraid of
contracting a debilitating tick borne disease.
The Hunt To Feed program nicely coincides with Connecticut’s Deer Management plan, whereby
hunters are awarded replacement harvest tags as an encouragement to harvest more deer in Zones
11 and 12. (Towns in Fairfield Country and all along the CT Coastline to the Rhode Island border)

Venison Recipe of the Month by Pro Staff Jim Stowe
Venison Osso Bucco
16 venison shanks 1 1/2” thick with bone in
1 cup seasoned flour with salt & pepper
4 ounces olive oil
2 ounces butter
1 medium onion diced
3 cloves garlic chopped
1/2 teaspoon dried basil
1/2 teaspoon black pepper
2 lbs fresh tomatoes diced
3 cups white wine
2 cups beef bouillon
chopped parsley
lemon zest
Season flour with salt & pepper & dredge shanks well. Heat oil and butter in large oven proof
pan until very hot. Sear shanks until well browned all over. Remove shanks to paper towel.
Reduce heat. Add more oil if needed. Add onions, garlic, basil, and oregano. Cook for 10
minutes. Add tomatoes and black pepper. Cook 10 minutes. Skim excess fat and add wine. Bring
to a boil. Reduce heat and simmer 15 minutes. Pre heat oven to 350 degrees. Put shanks in pan
and add beef bouillon to just cover shanks. Bring to a boil. Cover and place pan in oven. Cook 1
hour. Remove lid and bake uncovered 30 minutes or until very tender, almost falling off bone.
Note: Freeze shanks before cutting into 1 1/2” lengths. It is a lot easier.
